Benefits and potential risks of the lactoperoxidase system of raw milk preservation

Report of an FAO/WHO technical meeting

Overview

FAO together with WHO implemented a technical meeting on 28 November - 2 December 2005 on the benefits and potential risks of the lactoperoxidase system of raw milk preservation.

The meeting, which was held in FAOs headquarters in Rome, was implemented to provide scientific advice to Codex Alimentarius on the lactoperoxidase system. It also sought to respond to Member country concerns regarding the use of this system, particularly in light of the current Codex guidance on the application of the lactoperoxidase system of raw milk preservation which limit its application to milk and dairy products which will not enter into international trade.
